Toast with scrambled eggs and avocado
Ingredients
Sourdough bread
2 eggs
1 avocado
Salt
Olive oil
Method
Cut the avocado in half
Slice one half into thin slices. Set the other half aside in the fridge.
Toast the slices of bread in a toaster or frying pan.
Heat a frying pan with a dash of oil.
Once the pan is hot, add the eggs and stir until they set and have a creamy texture.
Place the avocado slices and scrambled eggs on top of the toast.
Drizzle a little oil over the top and enjoy!
Açaí bowl with banana, nuts, desiccated coconut and blueberries
Ingredients
250g acai powder
2 ripe bananas
125g fresh blueberries
Plain or plant-based yoghurt
100g desiccated coconut
1 handful of mixed nuts
Preparation
Using a blender, blend 1 yoghurt, 1 banana and 2 tablespoons of acai powder on the highest setting.
Add more yoghurt depending on the desired consistency, thicker or thinner.
Serve the mixture in a bowl.
Slice 1 banana.
Add the toppings: banana slices, desiccated coconut, fresh blueberries and mixed nuts.
Finally, savour and enjoy our açai bowl.
